Because the story has barely begun in the first chapter. I'd like to read the very beginning, skip around in the middle to see how the story progresses, and read the novel's end to see if your voice and tone reflect the story you set up in the first and second acts. In terms of self-edits, the beginning and end of a novel usually gets the most attention, so to get a clear picture of the level of editing required, I like to take a look at a couple of chapters throughout the novel.
